Life Update

Hey ya'll...long time no talk. Life is fun...hard...shocking...full of turns!!!!!  Last year we lost one of our cats (Bull Cat) to FIV...at the beginning of this year, we lost our second cat (Tom) to FIV. We were heartbroken about both. But what really hit us was our baby boy Zeus, our GSD. We had to put our baby boy down in September due to end-stage heart failure...he would have only been four years old on November 3rd. We saw the signs and refused to believe it and when we took him in, they confirmed our worst fears. So, my sweet Bailee Sue is an only fur child again. She turned 6 on November 5th!! Oh, don't let me forget...our sugar gliders, Bonnie & Clyde, had a baby...we named her Pearl. And we still have 6 snakes. SO MUCH has happened since my last posts. We have moved out of East Nashville. Moved completely out of Nashville, actually. Took our behinds all the way back down to Columbia. And we couldn't be more happy here. Instant Pot Chili!!

I was supposed to post this last night, but we all know how plans tend to work out when you have a newborn.  🤷🏻‍♀️ So, this instant pot chili is one of our favs! We discovered this recipe over 2 years ago when we started living in the camper! And we continue to make it! So easy and so good!! What you need: •1 lb ground beef (85/15 or 90/10) •1 large onion chopped •3 cloves of garlic finely chopped •1/4 cup chili powder •1 tablespoon cumin •1 tablespoon oregano •1 1/2 cups water •1 - 28oz can crushed tomatoes •4 cans mixed beans (we get the tri-blend beans - black, kidney, pinto) drained & rinsed! **optional: shredded cheese & corn chips What to do:  Turn your Instant Pot onto sauté mode. Put a little vegetable oil into your pot (I only use olive oil, so that’s fine, too). Add your onions and garlic and cook for a few minutes, until translucent. Life Update

Life update, y’all. It’s been a WHILE since I’ve posted! Since the last post (since been deleted) I’ve not only QUIT my SeneGence side business...I’ve also birthed another human!! And purchased a few more animals. And bought quite a bit more makeup haha. Photo posted is of our newest edition: Charlotte Blake! Grayson is becoming such a good, new big brother!! It’s been a MAJOR change in his life, so we’ve had to do A LOT of adjusting. Continue to pray for us on that! We’ve been doing well, though! And I’m excited to start blogging again!

Eggplant Parm!

Hey guys! I’ll be making 2 posts today...so stay tuned! So, for my first post I’m sharing our Eggplant Parm we had last night. It was so so good!! I followed a recipe by Emmy’s Blog. For 3 eggplants, there wasn’t enough breadcrumb mixture or egg mixture. So if you want to make a big one, then you’ll just need to whisk some more eggs and put some more breadcrumbs into your bowl. I ended up just using like less than 2 eggplants. The rest are sliced in my fridge...I’ll have to figure out what to do with them later. Anyway, great recipe. It was absolutely delicious!!! I ate 4 slices...Blake are 6 and Grayson ate 5!!! So it was definitely a hit!!! All of my ingredients came from Whole Foods via Prime Now...great prices, great quality...never any complaints from me!! Enjoy! Thankful Thursday!!

Happy Thursday! We call Thursday, Thankful Thursday around here. And today I’m thankful for life. I’m thankful for my side biz... SeneGence . I’m thankful for a healthy child. I’m thankful that we have a roof over our head. I’m NOT thankful for bills...and I’m NOT thankful for money being tied up in limbo causing all of our bills to be late! That....my friends.....is STRESSFUL! But all of that aside, I’m SO happy to be able to share life with y’all. So, since it’s Thankful Thursday and I mentioned being thankful for my SeneGence business....let’s talk about it!! I LOVE every single one of our products (that I’ve tried) and not because I sell them. The reason I became a distributor is because I fell in love with LipSense and just wanted to share it with everyone around me. And I have consistently posted about it on Facebook and Instagram. And I’ve had a couple people bite and make purchases from me...no surprise they love it and have since purchased from me again. Howe...

HUMP DAYYYY!!!!

Y’all...I’m sorry. My post went to drafts instead of public yesterday! Hey y’all. I’ve been missing for minute...oh no!! So, since I missed a day AND since all we had for dinner last night was yummy burgers and Alexia waffle fries...I’m posting about our Monday night dinner. There’s a pic on my Instagram already...so check that out! Alright, I found an awesome BBQ Pineapple Chicken Kabob recipe via Damn Delicious (obviously lol) and I tweaked it a bit. I don’t have skewers or a grill (ugh coming soon!) so I made a sheet pan dinner out of it! I failed to read the whole recipe before I started, so I didn’t get to marinate my chicken for 2-8 hours as suggested. That’s alright, because I ended up just pouring the whole bowl of marinade onto the sheet pan and letting everything soak that goodness up. Ha!! I also failed to purchase another chunk of fresh ginger so I just sprinkled some dried ginger powder in the mix...still good, just not AS good. If going the sheet pan way, I’d ...

Happy Sunday! Hope you all are having a fabulous Memorial Day weekend!! Last night I did something new to me. I made homemade Salisbury Steak! I was a bit nervous, but it was so so easy!! So, for this meal, I followed April’s recipe from Whisk It Real Gud ! I only did a couple things different with this one. I used 2 small yellow onions for my diced onion...and I used one medium/large red onion for my slices. And I sautéed the diced onions first...sat them aside and then sautéed my red onion rings. Then to my red onions, I added sliced Baby Bella mushrooms. When it came to the bread crumbs, I just bought a container of plain bread crumbs from Whole Foods. Worked great!! And I don’t own celery salt, so I left that out. I also used a box of beef stock instead of the bouillon.. Other than that, I pretty much followed the rest of the recipe!
