Happy Sunday!
Hope you all are having a fabulous Memorial Day weekend!!
Last night I did something new to me. I made homemade Salisbury Steak!
I was a bit nervous, but it was so so easy!!
So, for this meal, I followed April’s recipe from Whisk It Real Gud!
I only did a couple things different with this one.
I used 2 small yellow onions for my diced onion...and I used one medium/large red onion for my slices. And I sautéed the diced onions first...sat them aside and then sautéed my red onion rings. Then to my red onions, I added sliced Baby Bella mushrooms. When it came to the bread crumbs, I just bought a container of plain bread crumbs from Whole Foods. Worked great!! And I don’t own celery salt, so I left that out. I also used a box of beef stock instead of the bouillon.. Other than that, I pretty much followed the rest of the recipe! We had mashed potatoes on the side. It was DELICIOUS!

Life Update

Hey ya'll...long time no talk. Life is fun...hard...shocking...full of turns!!!!!  Last year we lost one of our cats (Bull Cat) to FIV...at the beginning of this year, we lost our second cat (Tom) to FIV. We were heartbroken about both. But what really hit us was our baby boy Zeus, our GSD. We had to put our baby boy down in September due to end-stage heart failure...he would have only been four years old on November 3rd. We saw the signs and refused to believe it and when we took him in, they confirmed our worst fears. So, my sweet Bailee Sue is an only fur child again. She turned 6 on November 5th!! Oh, don't let me forget...our sugar gliders, Bonnie & Clyde, had a baby...we named her Pearl. And we still have 6 snakes. SO MUCH has happened since my last posts. We have moved out of East Nashville. Moved completely out of Nashville, actually. Took our behinds all the way back down to Columbia. And we couldn't be more happy here. Eggplant Parm!

Hey guys! I’ll be making 2 posts today...so stay tuned! So, for my first post I’m sharing our Eggplant Parm we had last night. It was so so good!! I followed a recipe by Emmy’s Blog. For 3 eggplants, there wasn’t enough breadcrumb mixture or egg mixture. So if you want to make a big one, then you’ll just need to whisk some more eggs and put some more breadcrumbs into your bowl. I ended up just using like less than 2 eggplants. The rest are sliced in my fridge...I’ll have to figure out what to do with them later. Anyway, great recipe. It was absolutely delicious!!! I ate 4 slices...Blake are 6 and Grayson ate 5!!! So it was definitely a hit!!! All of my ingredients came from Whole Foods via Prime Now...great prices, great quality...never any complaints from me!! Enjoy! Stove Top Pot Roast

Hello again, people! As a lot of you know, I like cooking. I love to find recipes and use them as my template! I rarely ever follow a recipe exactly as it’s written. So, the other day I made a stove-top pot-roast! I used a mixture of Ree Drummond/ Pioneer Woman and Chungah Rhee/ Damn Delicious . They’re literally 2 of my favorite cooks. So, if we are being 100% honest, almost everything I cook is inspired by their recipes! Anyway...I started by slicing the onions and the potatoes in half and chopping the carrots and celery into edible chunks. Threw a little olive oil into my pot and heated that up...then I seared my onions (flat side down). Once they were nice and browned, I removed them onto a plate and threw my carrots into the pan for a few minutes. Once those were seared a little, I placed them onto the onion plate. Now, you’re ready to sear that roast!! Add a tad more olive oil to the pot and then throw that bad boy in there. You’re going to want to try and move it around.....
